The Art of Sipping Tea is the art of returning to the beginning of time, to settle. To let communication arise as the essence of presence. We reach sense by coming to our senses with tea. This harbinger of meditation is a world to explore. We sip to ponder, to feel, to dance awhile in simple exuberance.
The Gong-Fu Catering Experience
Gong-Fu Cha (literally “skillful tea”) is a centuries-old Chinese tradition, practiced for at least a thousand years, with roots in the Song Dynasty (10th–13th centuries). Today, the practice is still alive in Fujian, Guangdong, and Taiwan. The tea itself Camellia sinensis is the mother plant of all true teas, and from it spring thousands of varietals, grouped mainly into six families: green, white, yellow, oolong, black (red), and pu-erh.
In Gong-Fu style, guests come to the tea table and discover the fragrance, flavor, and subtle variety of tea. The tea becomes our guide into presence, each steeping a new note in the conversation.
The Art of Sipping Tea - Tea Class
Offered as a single class or as a six-part series, The Art of Sipping Tea invites participants to explore the six great families of tea. Together we taste pinnacle examples — from the honeysuckle astringency of an aged White to the amber fruit sunshine of a “bug-bitten” Oolong — while learning how cultivation, processing, and brewing shape flavor. Each session blends tasting, simple meditation, and playful training in the art of the tea sommelier, creating an experience that is social, mindful, and full of discovery.
